CHEESE CASSEROLE†
(KÄSEAUFLAUF)
6 oz. Gouda or Edam cheese (shredded)
5 day old rolls
2 cups milk (hot)
5 oz. ham (diced)
½ cup onion (diced)
3 tablespoons butter or margarine
¼ - ½ teaspoon salt
¼ teaspoon nutmeg

3 large eggs (separated)
Thinly slice the rolls into a large bowl and pour the hot milk
over it. Stir to insure all the slices are covered and set
aside. Melt 1 tablespoon butter or margarine in a small frying
pan. Add the onion, ham and sauté for 5 minutes. Pour over the
roll mixture. Add the egg yolks, salt, pepper (to taste),
nutmeg, shredded cheese and mix well. Beat the egg whites with
a dash of salt until stiff and fold into the mixture. Spread
into a greased casserole (2 ½ quarts) and dot the top with the
remaining 2 tablespoons of butter or margarine. Bake in a
preheated oven at 350° for 35-40 minutes. Serve with a salad.
